Recipe adapted and modified from Agnes Chang ” I Can Bake”
Ingredients A :
250g plain flour
1 tbsp baking powder
½ tsp salt
Ingredients B :
60g castor sugar
90g cheddar cheese, grated ( Used mozzarella cheese )
Ingredients C :
1 egg, lightly beaten
250ml fresh milk
60ml corn oil
50g cheddar cheese, grated ( Used mozzarella cheese)
Some blueberry ( not included in original recipe )
1. Sift A into a mixing bowl and stir in B.
2. Beat C in a bowl for about 1 minute till well-mixed. Pour into flour mixture and mix till just combined, fold in blueberry lightly (do not over-mix, it should remain lumpy).
3. Spoon into muffin moulds lined with paper cups, till ¾ full. Sprinkle top with more grated cheese (mozzarella cheese) as decoration.
4. Bake in a pre-heated oven at 200 degree C for about 20 minutes till cooked and golden brown.
5. Remove and serve warm.
