Chocolate Banana Muffin

Recipe adapted and modified from Nasi Lemak Lover

*makes 10 to 15 muffins (depend on the paper cup size)


125g butter

100g caster sugar

150g cake flour

2 eggs (large)

½ tsp baking powder

¼ tsp baking soda

2 tbsp cocoa powder

100ml milk

½ tsp vanilla essence  (not in original recipe)

½ cup chocolate chips

150g mashed banana

Some banana wedges – optional (I omitted)

Method : ( Modified)

1. Sift and combine flour, cocoa powder, baking soda and baking powder and set aside

2. Beat butter and sugar until fluffy (about 3 mins on medium speed)

3. Add in the eggs one at a time, mix well

4. Add in mashed banana, vanilla essence and milk into the butter mixture and give a quick whisk

5. Lower the mixer speed, add in flour mixture and blend until the mixture become smooth. Do not over-mix

6. Stir in chocolate chips

6. Scoop the batter in to the muffin paper liners to about 3/4 full. Then insert a banana wedge into the middle of the muffin. Repeat till all the batter has been used.

7. Bake in pre-heated oven at 180C for 25mins.
